Eggplant, also commonly referred to as Aubergine, is used in many traditional recipes from all over the world. It has a mild taste that pairs well with stronger flavours. Our eggplants are a deep purple and vary in size; we will always choose for you the largest ones available (unless you specify otherwise).
Try this Moroccan-spiced roasted eggplant and tomatoes dish. Replace the canned tomatoes with 2 cups of fresh tomatoes per can, or simply follow the recipe and place a handful of mixed cherry tomatoes for a burst of flavour and colour.
n.b. These eggplants are not produced at our farm but they come from another local producer.
